I am a sucker for a good salmon dish…and let me tell you, this is a good salmon dish. This one is great hot or cold, and from start to finish, only took 20 minutes to whip up. This dish just looks healthy and delicious, but there are so many nutritiously dense superfoods in here that will make your body (and tastebuds) EXTREMELY happy!
I decided to bake this wild salmon, as it is a healthier alternative to pan searing it, and it also results in a piece of fish that’s more moist and flavorful, I think. All I did was massage it with some coconut oil and himalayan salt, topped it with sesame seeds and cilantro, and popped it in the oven for 10-12 minutes (depending on thickness)!
This sauce is where all the magic happens though. You don’t even need a blender for this one! Tahini is definitely the superfood spotlight in this dish. Tahini is one of the best sources of calcium out there. Yea, you heard right…those milk commercials have been lying to us all along. It’s also extremely high in vitamin B and E, and minerals such as phosphorus, lecithin, magnesium, potassium and iron. It’s extremely easy on your digestive system because of its high alkaline mineral content, so it is great for assisting in weight loss!!! I also added my favorite spice, turmeric, to give it that orange glow.
- Buckwheat Soba noodles
- Peas or Edemame beans
- Cilantro
- Scallions
- Avocado
- 1 tbsp tahini
- 2 tbsp sesame oil
- 1 tbsp honey
- 2 tbsp soy sauce (I use substitute soy)
- 1 tbsp rice wine vinegar
- ½ avocado mashed
- ½ tbsp turmeric
- 1 piece wild salmon
- 1 tbsp coconut oil
- 1 tbsp sesame seeds
- Preheat oven to 375 degrees F
- Massage salmon with coconut oil and salt, pop in oven for 10-12 min
- Cook soba noodles according to package
- In a bowl, combine tahini, honey, sesame oil, soy, vinegar, mashed avocado, and turmeric.
- Mix with a fork until combined.
- When soba noodles are finished, rinse with cold water to prevent from cooking longer.
- Add sauce to hot saucepan, and then toss in noodles until they are covered in the sauce
- Add peas/edemame and chopped cilantro/scallions.
- Take salmon out, top on noodles, and enjoy!
