Soba Noodles + Salmon with a creamy avocado tahini sauce

Ingredients
  • Buckwheat Soba noodles
  • Peas or Edemame beans
  • Cilantro
  • Scallions
  • Avocado
  • 1 tbsp tahini
  • 2 tbsp sesame oil
  • 1 tbsp honey
  • 2 tbsp soy sauce (I use substitute soy)
  • 1 tbsp rice wine vinegar
  • ½ avocado mashed
  • ½ tbsp turmeric
  • 1 piece wild salmon
  • 1 tbsp coconut oil
  • 1 tbsp sesame seeds
Instructions
  1. Preheat oven to 375 degrees F
  2. Massage salmon with coconut oil and salt, pop in oven for 10-12 min
  3. Cook soba noodles according to package
  4. In a bowl, combine tahini, honey, sesame oil, soy, vinegar, mashed avocado, and turmeric.
  5. Mix with a fork until combined.
  6. When soba noodles are finished, rinse with cold water to prevent from cooking longer.
  7. Add sauce to hot saucepan, and then toss in noodles until they are covered in the sauce
  8. Add peas/edemame and chopped cilantro/scallions.
  9. Take salmon out, top on noodles, and enjoy!
