Let’s just take a moment to appreciate pancakes. Light, fluffy, syrupy, melt-in-your-mouth delicious. However, this indulgent breakfast tends to carry a bad rap of being unhealthy and, well, naughty. The good news is on this monday morning, is that they don’t have to be! I made these beauties with just two ingredients!! Bananas + Eggs. I bet you’re staring at the photo in disbelief, thinking “why the hell have I been making pancakes with 10+ ingredients?!” Eat these for breakfast and feel like an absolute champion, without the residual guilt…I drool just looking at those caramelized bananas…
TWO Ingredient Caramelized Banana Pancakes

Ingredients
- 1 medium ripe banana
- 2 large eggs
Instructions
- Peel the banana and break it up into several big chunks in a bowl. Use a dinner fork to thoroughly mash the banana. Continue mashing until the banana has a pudding-like consistency and no large lumps remain.
- Whisk the eggs in a separate bowl and combine with banana mash.
- Add any extra ingredients: These pancakes are amazing on their own, but a few extras will elevate them even more.
- Add ⅛ teaspoon of baking powder for fluffier and lighter pancakes (try cinnamon, vanilla extract, cocoa powder, matcha powder, etc.
- The batter will be very loose and liquidy, more like whisked eggs than regular pancake batter.
- Heat a griddle over medium heat: Melt a little butter or coconut oil in the pan to prevent sticking.
- Drop the batter on hot griddle: Drop roughly 2 tablespoons of batter onto the hot griddle.
- Cook for about 2 minutes
- Flip the pancakes gently and slowly — the opposite of regular pancakes.
- Cook for about another minute or so, then transfer to a plate.
- Serve warm and enjoy with copious amounts of maple syrup, honey, or whatever your toppings of choice may be!
