TWO Ingredient Caramelized Banana Pancakes

Ingredients
  • 1 medium ripe banana
  • 2 large eggs
Instructions
  1. Peel the banana and break it up into several big chunks in a bowl. Use a dinner fork to thoroughly mash the banana. Continue mashing until the banana has a pudding-like consistency and no large lumps remain.
  2. Whisk the eggs in a separate bowl and combine with banana mash.
  3. Add any extra ingredients: These pancakes are amazing on their own, but a few extras will elevate them even more.
  4. Add ⅛ teaspoon of baking powder for fluffier and lighter pancakes (try cinnamon, vanilla extract, cocoa powder, matcha powder, etc.
  5. The batter will be very loose and liquidy, more like whisked eggs than regular pancake batter.
  6. Heat a griddle over medium heat: Melt a little butter or coconut oil in the pan to prevent sticking.
  7. Drop the batter on hot griddle: Drop roughly 2 tablespoons of batter onto the hot griddle.
  8. Cook for about 2 minutes
  9. Flip the pancakes gently and slowly — the opposite of regular pancakes.
  10. Cook for about another minute or so, then transfer to a plate.
  11. Serve warm and enjoy with copious amounts of maple syrup, honey, or whatever your toppings of choice may be!
